Thanksgiving Side Dishes
When you think of Thanksgiving, you generally think of turkey. You have seen the pictures of the the perfect turkey, sitting on a platter with golden brown skin and dripping juices. There are thousands of recipes available for your Thanksgiving fowl but a meal is made up of more than one dish. It is just as important to have quality recipes for your Thanksgiving Side Dishes. You can count on a successful meal when you plan to serve a starch, at least two vegetables or fruits, and a bread.
The traditional accompaniment to turkey is stuffing or dressing. There goes your starch. For a twist on traditional practices, you could try making scalloped oysters for your dressing. Economical and very easy this side dish looks both elegant and sophisticated. Grease a deep casserole dish with butter and layer the bottom with crushed crackers. Soda crackers work well but feel free to experiment. On top of the crackers, place a layer of canned oysters sprinkled with black pepper. Dot this layer with a small amount of butter and then continue to add layers until you’ve filled the casserole dish. Add enough milk to come to the top of the mixture and bake at 350 deg until the top layer of crackers is golden brown. This dish is easy to reheat and makes excellent leftovers for the day after Thanksgiving.
Generally, your two vegetables or fruits include a green vegetable and one of another color. You might try baking sweet potatoes or preparing corn on the cob as an addition to your Thanksgiving Side Dishes. A tasty fruit side-dish is “Strawberry Salad”. Adding a container of frozen strawberries along with sliced bananas, cream cheese, pecans, and crushed pineapple to two boxes of strawberry jello makes a fancy and very tasty cold fruit dish. An added bonus is that this dish can be made the day prior to Thanksgiving thus freeing up time for other things on the holiday.
There isn’t anyone out there who doesn’t enjoy homemade yeast rolls. The smell of freshly baking bread will combine with the smell of the turkey and cause excessive drooling among those waiting for the meal. Homemade bread may seem intimidating but in reality it is very easy. In a bowl, combine 2 cups warm water, 1 tbsp. of salt, 2 tbsp. of yeast, 1/4 cup of olive oil, and 1/8 cup of brown sugar. Add flour just until the mixture no longer sticks to the sides or bottom of the bowl. If you overestimate, just add a little water until you get the consistency you desire. Once you have the dough, knead it for a little bit until it is smooth and then cover it and walk away. This is a good time to work on one of your other side dishes. In about 45 minutes the dough will have grown to about twice its size and you can form it into rolls. Put these rolls in a greased pan so they are not touching. When they have grown together (about 30 minutes), pop them in the oven at 400 deg. until they are golden brown on top.
